Eddies Best Cottage Pie
Hello my name is Eddie and I have a slightly stupid human who thinks that he can cook, which he actually does sometimes but I don’t think he’s very good. He keeps on burning the oven.
Here is my recipe for really good cottage pie. You can also use or to make shepherd’s pie. Both of them are yummy. The human makes this but he doesn’t always share any with me. The key is to really let the mince cook through as it makes it warm and happy and
Use my mash potato tips for a great topping
Gently heat the dripping in a large frying pan until it melts. Add the onions and fry gently till they turn golden - add and fry the minced beef until browned all over.
Add the grated carrot, thyme and stir in the tomato purée and cook for a further few minutes.
Add the stock to the pan and leave to simmer for a good hour and a half until the beef is tender and the mixture is thickened. Season, to taste, with salt, freshly ground black pepper and a few dashes of Worcestershire sauce. Keep warm over a very low heat.
Preheat the grill to high.
Make the mash as Ive already told you!
Place the mince mixture into a baking dish and spoon the mash over the top. Place under the grill for 8-10 minutes, or until the top is golden-brown and a bit crispy. Share with your dog. But not the cat. A cat would probably explode if it ate anything this yummy.
For the mince
Beef dripping – enough to fry the mince in
750g minced beef
large onion, finely chopped
a medium carrot - grated
4 sprigs fresh thyme, leaves only
2 tbsp tomato puree
500ml beef stock (Knorr Reach Beef is really good)
salt and freshly ground black pepper
Worcestershire sauce (or Mushroom ketchup if you can find it, its fab), to taste
For the mash
900g Maris Piper potatoes, peeled and chopped
115g butter
salt and white pepper
